P-29, r. 1 - Regulation respecting food

Full text Poultry must be dressed in such a way as to meet the following requirements:
(a)  the feathers, stumps and hairs must be removed;
(b)  the oil gland and head must be removed;
(c)  the viscera and giblets must be removed;
(d)  the interior and exterior of the carcass must be washed and drained;
(e)  the feet must be cut off at the tarsal joint.
Notwithstanding the foregoing, the head and feet may remain attached to the carcass if the head is wrapped in a waterproof bag and the cuticle and claws are removed from the feet.
