5.2.10. The operator must keep registers indicating for each lot:
(1) the name and address of the producer from whom they are received;
(2) the date of receipt;
(3) the date of grading;
(4) the quantity of eggs graded in each grade;
(5) the quantity of inedible eggs that cannot be graded;
(6) the name and address of the buyer of the eggs mentioned in subparagraph 5.
The registers must be kept up to date, kept available in the station for an inspector and retained for at least 12 months from the last entry.
